    A favourite in Cork and a delicious alternative for the festive table, spiced beef pairs beautifully with crunchy roast potatoes, sweet red cabbage, and tangy horseradish sauce. This food recipe, courtesy of Rachel Allen, is rich in flavour and even better when served as leftovers in sandwiches or salads.

    The Legacy of Spiced Beef

    Spiced beef has deep roots in Irish culinary history, particularly in Cork. Once a staple for sailors, who relied on its long shelf life thanks to its salt and spice preservation, it has evolved into a cherished festive dish.

    Today, Cork’s English Market offers a variety of spiced beef options, each butcher boasting their own secret recipe. However, making it at home allows you to create your personalised blend of flavours.

    Rachel Allen’s Spiced Beef Christmas Recipe

    Serves: 6–8

    Ingredients:

    • 2kg silverside of beef (or flank)
    • 25g black peppercorns
    • 25g allspice berries
    • 25g juniper berries
    • 100g light brown sugar
    • 125g salt
    • 5g saltpetre (optional)

    Method:

    • Prepare the beef by trimming excess fat.
    • Grind the spices finely and mix with sugar, salt, and saltpetre (if using).
    • Rub the mixture over the beef and refrigerate for 4–6 days, turning daily.
    • Before cooking, roll and tie the meat, then simmer in water for 50 minutes per kilogram.
    • Once cooked, slice and serve warm.

    This flavour-packed dish is versatile, making it an ideal centrepiece for Christmas Day.

    The Perfect Sides

    Crunchy Roast Potatoes

    Pre-boil peeled potatoes, roughen their edges, and roast in hot oil or fat until golden.

    Sweet and Sour Red Cabbage

    Simmer sliced red cabbage with vinegar, water, sugar, and apples for a beautifully balanced side dish.

    Horseradish Sauce

    Combine whipped cream with freshly grated horseradish, mustard, lemon juice, and a touch of sugar for a tangy accompaniment.
