Boosting your Immune System with Parsley Dip
Thursday 16th December
I don;t know about you but I’ve still all my Christmas shopping to do. Plus a number of social commitments. Plus all my work to finish before the holidays. This spells trouble. Being stressed and busy usually means one thing – a compromised immune system. If you want to stay well this Christmas, read my article in today’s Cork Indo:

Try out this lovely dip below and you can easily serve it up at your house party or on Christmas day:
1 large bunch of parsley
1 clove of garlic
3 tablespoons of extra virgin olive oil
1 tablepoon of white wine vinegar
Sea salt and freshly cracked pepper
Place the parsley and garlic in a food processor and pulse until smooth. Slowly pour in the oil and vinegar, while mixing. Season with salt and pepper.
