Chickpea Burger

If you are interested in a different type of burger, read my article today in the Cork Independent. If you want more spice (you know who you are Carla!!!) then simply double up on the spices and herbs in this recipe.

Remember the week I gave you heaps of interesting facts and information on Chickpeas!!

Chickpea burgers

240g tined chickpeas (one tin drained)
2 cloves garlic (crushed)
1 red onion (finely chopped)
1 large handful of parsley (remove thicker stems and chop finely)
¼ teaspoon ground cumin
¼ teaspoon chilli or paprika
80g whole wheat flour
1 egg, beaten
Sea salt and pepper
Preheat oven to 180 oc

Place the chickpeas, flour, garlic, onion, parsley, cumin and paprika in a blender and add a pinch of salt and pepper. Blitz and pour into a mixing bowl and mix in eggs well.

Place in fridge for 15 mins.

Take mixture out and shape into patties by scooping some out with your hands, rolling into a ball and then flattening into ½ inch to an inch patties. Place in oven on some baking paper and cook for 15-20 minutes.
